শুভাগতা দেবাশীষ has shared a traditional Bengali recipe for থোড়কুচি দিয়ে চিংড়ি, a dish made with easily available ingredients. The recipe includes থোড়কুচি (inner part of banana plant), shrimp, optional potato cubes, chopped onion, ginger-garlic paste, green chilies, turmeric powder, chili powder, cumin powder, bay leaf, garam masala, salt, sugar, and mustard oil.
Ingredients
- থোড়কুচি: 2 cups - Shrimp: 200 grams - Potato cubes: 1 (optional) - Chopped onion: 1 - Ginger-garlic paste: 1 teaspoon - Green chilies: 2-3 - Turmeric powder: half teaspoon - Chili powder: half teaspoon - Cumin powder: half teaspoon - Bay leaf: 1 - Garam masala: half teaspoon - Salt: to taste - Sugar: a pinch - Mustard oil: as needed
Method
1. Thinly slice the থোড়কুচি and remove the fibrous strings. 2. Boil the sliced থোড়কুচি with salt and turmeric. 3. Drain the water and set aside. 4. Marinate the shrimp with salt and turmeric, then lightly fry in mustard oil. 5. Heat oil in a pan, add bay leaf and onion, and fry. 6. Add ginger-garlic paste and stir. 7. If using potato, lightly fry it now. 8. Add the boiled থোড়কুচি, turmeric, chili, and cumin powder, and sauté well. 9. Add the fried shrimp. 10. Cover with a little water and cook for 10 minutes. 11. Finally, add green chilies, sugar, and garam masala.
