This recipe for whole garlic beef includes 2 kg beef, 1 cup chopped onions, 2 tbsp ginger paste, 1.5 tbsp garlic paste, 1 tsp turmeric powder, 2 tbsp chili powder, 2 tbsp cumin powder, 1 tbsp coriander powder, a few cardamom, cinnamon, bay leaves, and cloves, salt to taste, half cup chopped tomatoes, slightly more than half cup oil, 5-6 whole garlic, 1 tsp garam masala powder, 7-8 raw chilies, and half tsp nutmeg-mace powder. Fry onions in oil until brown, add cardamom, cinnamon, bay leaves, and cloves. Then add ginger paste, garlic paste, chopped tomatoes, raw chili slices, cumin powder, coriander powder, and stir. Add water if needed while frying spices. Add beef and stir well, cover and cook. After 15 minutes, stir beef again and add 2-3 cups hot water. Cover and cook for 15 minutes. Remove outer skin of whole garlic (do not remove inner skin), add whole garlic, a few raw chilies, garam masala powder, and nutmeg-mace powder. When beef is cooked and oil rises to the top, turn off the heat.
