Sitara Ferdous has shared a unique Sufi Biryani recipe that incorporates traditional Khasi cooking elements. The recipe involves marinating meat with various spices, yogurt, and oil, then cooking it with rice, dried fruits, and herbs. The dish is finished with a mixture of milk, cream, sugar, and spices.
The detailed steps include washing and draining the meat, marinating it for 7-8 hours, and occasionally mixing it. Rice is also washed and drained, then partially cooked in boiling water with salt and oil. The meat is layered in a large pan with dried fruits, spices, and herbs, followed by partially cooked rice.
A mixture of milk, cream, sugar, white pepper powder, garam masala powder, and ghee is poured over the rice. The dish is then covered with more herbs and sealed with a dough cover. It is cooked on high heat for 10 minutes, medium heat for 20 minutes, and low heat for 30 minutes.
