To make Barfi Semai, you need fried semai (200 grams), condensed milk (1 cup), ghee (4 tablespoons), cardamom powder (half teaspoon), and raisins and chopped nuts (a bit more than half a cup).
First, break the semai into very small pieces. Heat ghee in a non-stick pan over medium heat and fry the semai until it turns reddish-brown, stirring frequently to avoid sticking to the pan.
Once the semai is fried, add cardamom powder and chopped nuts, mixing well. Gradually pour in the condensed milk while continuously stirring to combine well with the semai. When the mixture becomes sticky and starts to hold together, remove it from the heat.
Pour the mixture into a ghee-greased tray or plate, pressing down to flatten it evenly. Once cooled, cut into desired shapes.
