Kaon Chaaler Payesh is a traditional Bengali dessert made with Kaon rice, milk, jaggery, and aromatic spices. The recipe involves soaking the rice, simmering milk with spices, and cooking the rice until it absorbs the milk and becomes creamy.
Ingredients
- Half cup Kaon rice - 2 liters milk - Half cup jaggery - 1 bay leaf - 5 cardamom pods - A pinch of salt - Half handful each of cashews, pistachios, and raisins
Instructions
1. Soak the rice in water for half an hour. 2. Heat milk in a pan until it thickens slightly. 3. Add bay leaf and cardamom pods. 4. Drain the soaked rice and add it to the milk. Cook on low heat. 5. Stir occasionally to prevent sticking. 6. Add a pinch of salt. 7. Once the rice is cooked, add jaggery and mix well. Cook for another 5-7 minutes. 8. Finally, mix in chopped nuts and raisins.
