Farah Tanjin Subarna has shared a recipe for Achari vegetables, which involves steaming vegetables, frying spices, and simmering with tamarind and sugar.
The process starts by cutting and steaming the vegetables with salt and turmeric. Once the steam rises, reduce the heat and fry dry chilies, garlic, bay leaves, and Panch Phoron.
After frying, blend Panch Phoron, turmeric, chilies, and coriander with a bit of water. Mix this with the steamed vegetables and cook covered for 5-7 minutes.
Finally, add tamarind water and sugar, adjust the taste, and serve.
